Wine production is an essential economic engine in most regions across the Iberian Peninsula. However, the value of vineyard crops can be further potentialized by processing the generated waste within a circular economy perspective. In this project, acidic deep eutectic solvents (DES) were used in the fractionation of vine shoots biomass towards the separation of valuable streams. The application of acidic DES allowed partial delignification of the biomass matrix and simultaneous hydrolysis of the hemicellulose fraction. Furthermore, among studied DES, choline chloride: p-toluene sulfonic acid (ChCl:pTSA) enabled the extraction of anthocyanidins and anthocyanins. The higher molar ratio of ChCl allowed higher anthocyanidin and anthocyanins yield, whereas the Cl anion plays an important role in the stability of the flavylium cation of both anthocyanidin and anthocyanins.
